Recipes - Braised Beef

Ingredients
Serves 4 - 6 people.
1.3 kg (3lb) brisket of Albion Farm beef, trimmed of excess fat
2 medium onions, sliced
6 carrots, thinly sliced
1 small swede, cut into small cubes
3 potatos, thinly sliced
1 litre (1 & 3/4 pints) boiling beef stock
2 tbsp chopped fresh chives
Salt and pepper
If you wish to brown the beef first, pre-heat the slow cooker on High and brown
the beef quickly in a frying pan. Season with salt and pepper and place in
the slow cooker. Add the vegetables, packing them around the sides of the
beef. Pour the boiling stock over, making sure the vegetables are
immersed, and add the chives. Put the lid on and switch to Low for 8 - 10
hours. When ready to serve, lift the meat and vegetables out and then
transfer the juices into a pan. Boil and reduce by half.
